Stubborn Slice sells pizza by the slice from a 1971 Citroën van. Founder George Lorimer makes the dough by hand and toppings are added fresh to order. The pizzas are a hybrid of Italian and New York style slices of pizza.

The name Stubborn Slice is a mark of his determination to carve his own path: he chose not to go to university and not to mimic the formula of vans selling wood-fired pizzas. “I’m stubborn about the direction I’m taking. Despite the success of vans doing wood fired pizzas, I’m trying to do something new and different. I’m doing large slices of pizza, cooked in a gas oven, like they do in New York. It’s a more risky road to take because people are more familiar with wood-fired Neapolitan pizzas. But doing slices also makes me stand out."
